The wine exhibits a pretty cherry color, with a fine mousse of tiny persistent bubbles. The nose offers aromas of flowers, red berries, strawberry and raspberry, with light toasted notes from the aging. The finish is lively and bright.
Wine Enthusiast 89 points - Crushed vitamins, iodine and saline aromas accent dusty citrus scents. This is fresh and subtle on the palate, with a smooth bubble bead that wouldn’t shake a mouse. VVallformosa was established in 1865 and is managed by the 5th generation of the Domenech family. Each generation has added to the success of the company - the first and second generation farmed the land, the third introduced bottling; and the fourth generation developed the cava method.
The vineyards in Penedes are located between the Mediterranean Sea and the Catalan coastal mountain range and are planted to traditional white varieties Parellada, Xarel-lo and Macebeo as well as red varietals Tempranillo, Garancha, Samso and Monastrell. In total, 981 acres of vineyards are planted in Penedes and Rioja.
The Domenech family and Vallformosa are actively involved with cancer research through the Catalan Oncology Institution Foundation.

|The grapes are harvested by hand from the winery’s oldest estate vineyards, with the various varietals being picked from the end of September into the beginning of October. The wine undergoes “Traditional Method” fermentation, the first taking place in stainless steel tanks at controlled temperatures of 57°-60°F (14-16°C) and the second occurs in the bottle. It is aged an average of 12 months on lees prior to release.

The grapes are harvested by hand and by machine. Vallformosa Cava is produced using the traditional method and the wine is aged for 12-15 months on its lees.
|This “Method Traditional” Cava is best enjoyed chilled on its own as an aperitif or with most foods.
|Vallformosa is a family-owned winery, now managed by the fifth generation of the Domenech family. It was established in 1865 in Vilobi del Penedes, southwest of Barcelona in the heart of the Cava D.O. appellation of Spain. The family name first appeared in local history as far back as the 10th Century. In 1865, Don Francisco Jose Domenech planted vines on the land that became the family’s first vineyards. After Phylloxera destroyed almost all the vines in Spain in the late 1880’s, Vallformosa was among the pioneering wineries to replant non-contaminated rootstock. In the late 1930s, the Spanish Civil War erupted and part of winery was destroyed during fierce fighting near the end of the war. In 1940, when the Domenech family returned to rebuild the winery, Don Jose Domenech Torne (the son of Don Francisco) produced the first three bottles of Vallformosa Cava. Since the beginning, the Domenech family has been passionate about their wines and, even today, follow the teachings of their ancestors that the “soul of the wine is in the soil and in their family roots.”
