Macabeo grapes come from Catalunya’s inland Alt Camp region where the vineyards are dry farmed to yield rich, concentrated flavors. Muscat grapes are grown on estate vineyards in the prestigious Penedes region. After pressing and cold settling for 24 hours, the must is fermented at a temperature of 59°-62°F. The wine rests on the lees for an additional 2 months, gaining a smoother texture and added complexity.
