Technological advances aside, the last ten years were characterised by the gradual realisation of the key role played by viticulture in quality winemaking. For this reason, over the last few years a certain amount of experimentation has taken place to identify grapes and vineyards with the best characteristics. The aerial land register has helped with this identification. These grapes are brought to the vinification cellar separately from the others and form the base of the higher quality range of wines. The co-operative currently has 600 members and covers about 1300 hectares of vineyards, situated for the most part on the hills around the communes of Monteforte d’Alpone, Soave, Montecchia e S.Giovanni Ilarione. In some vineyards the vines are cordon trained, but most use the Verona pergola system. All vineyards work including green pruning, bunch thinning and irrigation is carried out with the aim of improving the quality of the fruit. The vines cultivated are Garganega primarily, with Trebbiano di Soave, Pinot Grigio, Chardonnay and Durella. Red varieties, outside those for Valpolicella (corvina, corvinone, rondinella, molinara) include cabernet, merlot and pinot nero. As part of their pursuit of quality, growers who produce Trebbiano di Soave and who keep yields low are incentivised. Even in the years of obligatory distillation of over production, the Cantina di Monteforte was among the first co-operatives to penalise growers who exceeded recommended yields.
