Estate-bottled Bottega Vinaia is the outcome of a vision by lead winemaker Anselmo Martini at the widely recognized Cavit winery. Starting in the early 1990s, Martini sought to explore the optimum potential of a handful of extraordinary vineyards in northern Italy’s Trentino region that, year after year, consistently produce the highest quality grapes. This select group of family-farmed vineyards is the source of Bottega Vinaia, an exceptional line of artisan wines that reflects the authentic qualities of specific vineyard sites in the Trentino terroir.
Wine maker notes
The Traminer grape variety originated from Alto Adige, from Termeno (Tramin in German) to be precise, and from the 16th century onwards spread to Alsace and a number of important German wine-growing areas, such as Wurtemberg and the Palatinate, where the cold to temperate climate enhances its bouquet. Gewurztraminer is a mutation of the ancient Traminer variety. The vineyards around Rovere della Luna lie over an ancient fan, which has shallow, brown soils rich in calcium on a loose sandy matrix. The vineyards in the upper Adige valley, on the other hand, are sited on glacial sediment (moraines and fans) containing sandstone, siltstone, marl, limestone and dolomite. These medium-depth soils have a loose sandy texture and contain plenty of stones and pebbles. The area enjoys a sub type of continental climate with fairly harsh winters, often with snow, and hot summers, but with large differences between day and night temperatures, which helps produce highly aromatic wines with fresh bouquets and crisp palates.

Technical notes
Grape Varieties - 100% Gewurztraminer Vinification - The grapes are harvested by hand and scrupulously selected, then destalked and crushed; the must produced remains in contact with the skins for a short time at a very cool temperature of 41-43F enabling the aromas to be extracted. Soft pressing is carried out very carefully in order to prevent color from being extracted from the skins as well as to prevent coarse flavors from being extracted. After fermentation (carried out at no higher than 68F) the wine is left to develop in stainless steel tanks for 4-5 months before being bottled.

Food pairing
Excellent with fish-based starters, vegetable first course dishes and white meat dishes. A nice pair with spicy fare of all kind.
