A full-bodied wine that features rich dark fruits, sweet baking spice and savory herbs, it is framed by firm tannins and bright acids.
Founded by Mike Duffy in 1984, Optima Winery is located in the Dry Creek Valley of Sonoma County, California. After graduating UC Davis with a degree in enology, Mike worked as the winemaker at Field Stone alongside Andre Tchelistcheff, a world renowned winemaker. Mike employs traditional techniques including open-top fermentations and extended macerations. Estate grown fruit is supplemented with grapes purchased from respected growers in Dry Creek Valley. The Optima portfolio includes Cabernet Sauvignon, Zinfandel, Zinfandel Port, Petite Sirah and Riesling.
|The fruit was destemmed and fermented to dryness in small one-ton fermentors. The wine was clarified, racked into new and one year old French oak barrels and aged for 15 months.
