|This Merlot offers up aromas of dark cherry and smoke. Following its fruit driven nose is a delicate palate filled with forward fruit. Rich flavors of black cherry jam, cassis, and cocoa nuances fill out a palate that is rich, smooth and elegant. Supple tannins fill the mid palate and linger in a finish that is complex and satisfying. This wine is not overstated and is great with food. Enjoy with charcoal grilled steak or seared pork tenderloin medallions in a molasses-balsamic glaze on a bed of wilted collard greens.
Vinification of this Merlot is straightforward and traditional using ripe, gently crushed fruit, 10% whole cluster inclusion, warm fermentations punched down frequently by hand, aging in a mix of new and older American oak (Canton Cooperage) barrels, and minimal racking and blending. The goal is to let the fruit express the structure, fruit and tannins that come from the vineyard.
