Pale golden robe with discreet green highlights. The nose is distinguished by its extreme purity, its airy dimension and its understated elegance. ”Timid” on the nose at first, hazelnut and almond characterise the rich, creamy dimension of this cuvee. The mouthfeel is just as elegant as the nose, with aromas of white fruits and lemon zest. Stephanie and Olivier Waris are the fourth generation of this family of winegrowers installed in Avize, a Grand Cru-classified village of the Cote des Blancs. These hands-on harvesters pour their passion and their know-how into creating champagnes that add to the reputation of their various terroirs. The Champagne WARIS-HUBERT vineyard encompasses the villages of Avize, Oger, Cramant, Chouilly and A , all classified ”Grand Cru”, along with the communes of Grauves, Bisseuil and Sezanne, terroirs of character. Each plot is separately vinified in stainless steel vats, so as to get the best out of the flavours of the Cote des Blancs, the Sezannais and the Vallee de l’Ardre. Overseeing every stage of their champagne production, Stephanie and Olivier practice rational viticulture. This guarantees that the excellence of the Grand Cru and Premier Cru terroirs is transmitted to the cuvees of Champagne WARIS-HUBERT. Every cuvee of Champagne WARIS-HUBERT benefits from cold settling for 72 hours and low-temperature fermentation. Once the alcoholic fermentation is over, the wines are aged on lees for one month, whereupon they are racked in order to commence malolactic fermentation. These stages contribute to the refinement of the flavours and finesse of WARIS- HUBERT Champagnes.
